Callaloo Fritters

INGREDIENTS

For Callaloo:
1 tablespoon Unsalted Butter
1 Onion, diced
Scotch Bonnet Pepper (hot pepper)
2 Garlic Cloves, grated
1 Tomato, diced
2 cups Raw Callaloo
Salt to taste

For Batter:
1 cup All-purpose Flour
½ teaspoon ground Pepper
¼ teaspoon Salt
1 teaspoon Curry Powder
Oil for frying (I am using coconut oil)

DIRECTIONS:

  1. In a heated frying pan, melt butter and sauté Onion, Garlic and Scotch Bonnet for 1 minute
  2. Add Tomato and Callaloo and steam for 7 minutes
  3. Set aside for later use
  4. In a bowl, combine Flour, ground Pepper, Salt and Curry Powder
  5. Gradually add water as needed and mix until you have a pancake like batter
  6. Add the steamed Callaloo and mix well
  7. Heat a frying pan and add oil (about 3 tbsps)
  8. For each fritter, use a little less than ¼ cup to spoon the mixture in the hot oil
  9. Fry until golden on both sides
  10. Drain on paper towels, then serve hot
