Spiced Pumpkin Fritters

INGREDIENTS

  • 1 pound Pumpkin
  • 1/2 cup Coconut Milk
  • 1 tablespoon Vanilla
  • 1 cup Flour
  • 1/4 cup Sugar
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Mixed Spice
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon Salt
  • Oil for frying

DIRECTIONS:

  • Boil pumpkin until tender. Set aside to cool
  • Blend pumpkin with coconut milk (this will yield 2 cups of puree which you can save for another batch)
  • Combine all dry ingredients
  • Add pumpkin mixture and mix well
  • In a heated frying pan, add oil (1/4 cup)
  • Add spoonfuls of the batter and fry until brown on both sides
  • Drain on paper towel
  • Serve hot and enjoy

NOTES:

  • Recipe makes about 17 fritters
  • If you do not plan to make more pumpkin fritters then adjust the pumpkin to 1/2 pound and use 1/4 cup coconut milk.
