Chicken and Vegetable Kebab

Ingredients
2 skinless, boneless chicken breasts – cut into 1 inch cubes (12 pieces)
1 large Onion, cut into 1 inch pieces
1 Zucchini, cut into 1 inch cubes (12 pieces)
1 Squash, cut into 1 inch cubes (12 pieces)
12 Cherry Tomatoes
2 tbsp Vegetable oil / Olive Oil
1 tsp Oregano, dried
1 tsp Basil, dried
Pepper and salt to taste (about 1/2 tsp each)
6 skewers (I am using bamboo)
Directions
- Soak bamboo skewers in cold water overnight or at least one hour before using to reduce burning
- Combine oil, basil, oregano, salt and pepper and whisk well to make marinade
- Toss vegetables and chicken in marinade (optional: let it rest for about 1 hour, otherwise you can use immediately)
- Preheat oven to 450 degrees Fahrenheit
- Thread bamboo skewers with vegetables and chicken in alternating order
- Place on baking sheet (with grill insert if you have)
- Bake for 20 minutes
