Green Plantain Porridge
Green Plantain Porridge – Its simple… I love plantain and I love porridge, so why not create the perfect recipe for Green Plantain Porridge. Your only concern will be, why you didn’t make it sooner and why you made only one pot.
Ingredients
1 medium Green Plantain
6 oz Water
1/2 teaspoon Vanilla + 1 tablespoon Vanilla
1/4 teaspoon Nutmeg
1/4 teaspoon Mixed Spice (a combination of any of the following spices – cinnamon, coriander seed, caraway, nutmeg, ginger, cloves, allspice, and mace)
1 1/2 cups Coconut Milk
2 tablespoons Sweetened Condensed Milk
1 tablespoon Sugar
Directions
- Peel and slice plantain into small pieces
- In a pot, heat Coconut Milk and 1 tbsp Vanilla
- In a blender, combine Plantain, Water, 1 tsp Vanilla, Cinnamon, Nutmeg and Mixed Spice
- Add Plantain mixture to heated Coconut Milk. Stir to prevent burning.
- Allow to cook on low to medium heat for 10 minutes. Stir occasionally
- After 10 minutes, add 2 tbsp Condensed Milk
- Simmer for 5 minutes
- Add 1 tbsp sugar or sweeten to taste
- Serve hot and enjoy
- NOTES – As with all recipes, we all have difference tastes. Feel free to use this as a guide to making you own. Use whatever milk you have, sweeten to your liken and add varying amounts of spice. This recipe works for me and the few who have tried it.
