Pumpkin Cornmeal Porridge

Pumpkin Cornmeal Porridge – Quick and easy recipe, just in time for a nice Jamaican style porridge breakfast.

Ingredients:
8 oz Pumpkin, diced
1/3 cup Cornmeal
1/2 teaspoon Cinnamon
1/2 teaspoon Nutmeg
1/4 teaspoon Mixed Spice
1/2 cup water (for blending)
1 1/2 cups Coconut Milk
2 Pimento seeds
Pinch of Salt
2 tablespoon Condensed Milk
*Sweeten to your liking

Directions:

  1. Peel and dice Pumpkin
  2. Blend Pumpkin, Cornmeal and spices with 1/2 cup water
  3. Bring 1 1/2 cups Coconut Milk to a boil with Pimento Seeds and a pinch of Salt
  4. Add Pumpkin mixture to Coconut Milk
  5. Boil of low flame. Stir continuously to prevent lumps or burning
  6. Add condensed milk or sweeten to your liking
  7. Serve hot and enjoy
