Pumpkin Cornmeal Porridge
Pumpkin Cornmeal Porridge – Quick and easy recipe, just in time for a nice Jamaican style porridge breakfast.
Ingredients:
8 oz Pumpkin, diced
1/3 cup Cornmeal
1/2 teaspoon Cinnamon
1/2 teaspoon Nutmeg
1/4 teaspoon Mixed Spice
1/2 cup water (for blending)
1 1/2 cups Coconut Milk
2 Pimento seeds
Pinch of Salt
2 tablespoon Condensed Milk
*Sweeten to your liking
Directions:
- Peel and dice Pumpkin
- Blend Pumpkin, Cornmeal and spices with 1/2 cup water
- Bring 1 1/2 cups Coconut Milk to a boil with Pimento Seeds and a pinch of Salt
- Add Pumpkin mixture to Coconut Milk
- Boil of low flame. Stir continuously to prevent lumps or burning
- Add condensed milk or sweeten to your liking
- Serve hot and enjoy
