Kidney Stew
How to cook Kidney Stew (cow kidney) using these ingredients:
Ingredients:
2lbs Kidney (cut and wash with vinegar and water)
3 sprigs Escallion, chopped
1 large Onion, sliced
1 medium Sweet Pepper, sliced
Scotch Bonnet Pepper (to taste), sliced
4 cloves Garlic, chopped
1 medium Tomato, diced
1 1/2 Tsp Salt
1 Tsp White pepper (ground) or black if you have
2 Tsp Browning
3 Tsp Sugar
1/2 Tbsp Jerk Seasoning (OPTIONAL)
2 Tbsp Vegetable Oil
Directions:
1 – Remove fat from kidney and cut into small pieces
2 – Wash kidney with vinegar and water
3 – Season kidney with salt, pepper and fresh seasoning
4 – Heat oil until very hot
5 – Add browning, sugar, Jerk seasoning and thyme
6 – Add kidney mixture and stir well
7 – Mixture will start to boil after 5 minutes (no water needed)
8 – Cover and simmer for 20 minutes
9 – After 20 minutes, add the ketchup and simmer for another 5 minutes
Serve and enjoy with your choice of rice, boiled dumpling, fried dumpling, boiled bananas or even bread.
