Saltfish and Okra

Saltfish and Okra (Salted Cod and Okra) is one of the best food combinations in the Caribbean. This quick and easy recipe is done in 10 minutes.

Ingredients:
1/2 lb Saltfish, precooked and flaked
6 Okras
1 small Onion
2 sprigs Escallion
3 Garlic Cloves
1/2 Sweet Pepper
1 Tomato
Scotch Bonnet Pepper
2 1/2 tbsp oil
Ground pepper
1 tbsp Butter

Directions:

  1. In a heated skillet, add 2 1/2 tbsp oil
  2. Sauté onions and escallion. Cook for 1 minute
  3. Add garlic, peppers, butter, tomato and okra. Cover and cook for 5 minutes
  4. Add saltfish and ground pepper. Cook for another 2 minutes

Serve Saltfish and Okra with your choice of starch.
