Peanut Porridge

Peanut Porridge – If I make no other porridge, I must make this one. See below video and recipe.

Ingredients

1 cup – Raw peanut

1 cup – Coconut Milk

2 tsp – Cinnamon

1 tsp – Mixed Spice or Nutmeg

3 tbsp – Sugar

1 tbsp – Vanilla

Method:

  • Place the peanuts and coconut milk in blender and process until smooth (or as smooth as you prefer)
  • Bring 1 1/2 cups of water to boil
  • Slowly add the blended mixture to the boiling water
  • Stir continuously to prevent the formation of lumps or prevent porridge from burning
  • Cook for 5 minutes
  • Add remaining ingredients and stir well.
  • Cook for 5 more minutes.
  • Enjoy your Peanut Porridge while its hot.
