Spiced Pumpkin Fritters
INGREDIENTS
- 1 pound Pumpkin
- 1/2 cup Coconut Milk
- 1 tablespoon Vanilla
- 1 cup Flour
- 1/4 cup Sugar
- 1 teaspoon Cinnamon
- 1/2 teaspoon Mixed Spice
- 1/4 teaspoon Nutmeg
- 1/4 teaspoon Salt
- Oil for frying
DIRECTIONS:
- Boil pumpkin until tender. Set aside to cool
- Blend pumpkin with coconut milk (this will yield 2 cups of puree which you can save for another batch)
- Combine all dry ingredients
- Add pumpkin mixture and mix well
- In a heated frying pan, add oil (1/4 cup)
- Add spoonfuls of the batter and fry until brown on both sides
- Drain on paper towel
- Serve hot and enjoy
NOTES:
- Recipe makes about 17 fritters
- If you do not plan to make more pumpkin fritters then adjust the pumpkin to 1/2 pound and use 1/4 cup coconut milk.
