Flourless Banana Oat Bread

Banana Oat Bread without flour

Try this Banana Oat bread without flour.

Portioned ingredients for flourless banana oat bread.
From back: Measuring cup with mixture of Coconut milk, vanilla and honey. Oats. Banana. Eggs. Cinnamon. Nutmeg and baking powder.

Ingredients

  • 3 large – Ripe bananas
  • 2 cups – Oats
  • 1/4 cup – Coconut milk
  • 2 large – Eggs
  • 1 tbsp – Vanilla
  • 1 tsp – Baking powder
  • 2 tbsp – Cinnamon
  • 1 tbsp – Nutmeg (or Mixed Spice)
  • 2 tbsp honey (optional)

Directions

  1. Preheat oven to 325°F
  2. Lightly grease baking pan
  3. Peel and mash bananas in a bowl
  4. Add all remaining ingredients to the bowl and mix until properly combined
  5. Pour batter into prepared baking pan
  6. Let mixture sit for 10 minutes to soak the oats
  7. Bake for 30 minutes (some ovens might require more time) test doneness with a toothpick to see if when inserted, it comes out clean
  8. Remove the pan from the oven and set to cool
  9. Store leftover banana oat bread in refrigerator

Notes: you can blend all the ingredients if you so desire. But I prefer not to because I like seeing the whole oat pieces.
