Banana Oat Bread without flour
Try this Banana Oat bread without flour.
Ingredients
- 3 large – Ripe bananas
- 2 cups – Oats
- 1/4 cup – Coconut milk
- 2 large – Eggs
- 1 tbsp – Vanilla
- 1 tsp – Baking powder
- 2 tbsp – Cinnamon
- 1 tbsp – Nutmeg (or Mixed Spice)
- 2 tbsp honey (optional)
Directions
- Preheat oven to 325°F
- Lightly grease baking pan
- Peel and mash bananas in a bowl
- Add all remaining ingredients to the bowl and mix until properly combined
- Pour batter into prepared baking pan
- Let mixture sit for 10 minutes to soak the oats
- Bake for 30 minutes (some ovens might require more time) test doneness with a toothpick to see if when inserted, it comes out clean
- Remove the pan from the oven and set to cool
- Store leftover banana oat bread in refrigerator
Notes: you can blend all the ingredients if you so desire. But I prefer not to because I like seeing the whole oat pieces.
