Jamaican Hominy Corn Porridge

I made this Jamaican Hominy Corn Porridge recipe more times than I can remember. Lets’ try it together:

Ingredients

·  1 cup            Hominy Corn (soaked overnight in 4 cups water)

·  3 cups          Water for cooking

·  2 cups          Coconut Milk

·  ½ cup           Oats, blended

·  2 tsp            Vanilla

·  ½ tsp           Nutmeg, grated

·  1 tsp            Cinnamon (1 cinnamon leaf)

·  4 tbsp         Sugar

·  A pinch of Salt

Directions

  1. Place hominy corn in container with 4 cups of water to soak overnight.
  2. Drain excess water from Hominy corn
  3. Bring 3 cups of fresh water to boil, add Hominy corn and a pinch of salt.
  4. Cook on medium heat until desired softness is achieved or cook in pressure cooker for 30 minutes.
  5. Blend oats with 1 cup of coconut milk
  6. Add blended oats and keep stirring continuously as the mixture thickens to avoid lumps.
  7. Lower flame and add remaining coconut milk, vanilla, nutmeg, cinnamon and sugar. Continue to stir.
  8. Cook for 3 minutes or until desired consistency is reached
  9. Serve and enjoy your while it’s hot.

Notes: Spice things up and combine this Jamaican Hominy Corn Porridge with the Jamaican Peanut Porridge.
