Sweet Potato Porridge
Sweet Potato Porridge has been added to my list of favourite Jamaican porridge recipes, and there are quite a few. It is an easy recipe that does not require much work.
INGREDIENTS
- 10 ounces Sweet Potato
- Coconut Milk – 6 to 8 ounces Coconut blending + 1 1/2 cups for boiling
- 1 tablespoon Vanilla
- 1/2 teaspoon Cinnamon
- 1/4 teaspoon Nutmeg
- 2 inches Dried Orange Peel
- 3 Pimento seeds
- 2 tablespoons Sweetened Condensed Milk
- 1 tablespoon Sugar
DIRECTIONS
- In a pot, add 1 1/2 cups Coconut Milk, Orange Peel and Pimento Seeds. Bring to a low boil
- In a blender, add Sweet Potato, Vanilla, Cinnamon, Nutmeg and 6 ounces Coconut Milk (add more only if needed)
- Add Sweet Potato Mixture to heated Coconut Milk and cook on low flame for 15-20 minutes
- Stir every 3-5 minutes to avoid burning
- Add Condensed Milk and Sugar or sweeten as desired
