Jamaican Hominy Corn Porridge
I made this Jamaican Hominy Corn Porridge recipe more times than I can remember. Lets’ try it together:
Ingredients
· 1 cup Hominy Corn (soaked overnight in 4 cups water)
· 3 cups Water for cooking
· 2 cups Coconut Milk
· ½ cup Oats, blended
· 2 tsp Vanilla
· ½ tsp Nutmeg, grated
· 1 tsp Cinnamon (1 cinnamon leaf)
· 4 tbsp Sugar
· A pinch of Salt
Directions
- Place hominy corn in container with 4 cups of water to soak overnight.
- Drain excess water from Hominy corn
- Bring 3 cups of fresh water to boil, add Hominy corn and a pinch of salt.
- Cook on medium heat until desired softness is achieved or cook in pressure cooker for 30 minutes.
- Blend oats with 1 cup of coconut milk
- Add blended oats and keep stirring continuously as the mixture thickens to avoid lumps.
- Lower flame and add remaining coconut milk, vanilla, nutmeg, cinnamon and sugar. Continue to stir.
- Cook for 3 minutes or until desired consistency is reached
- Serve and enjoy your while it’s hot.
