MANGO BANANA BREAD
This moist Mango Banana Bread is a delicious and fragrant variation of traditional banana bread. The preparation is fairly easy and uses everyday ingredients. And its a lovely recipe to use if you have excess mangoes (although there is no such thing) and overripe bananas at the same time. Enjoy!
- INGREDIENTS:
- 4 small ripe bananas (3/4 cup when mashed)
- 1 Mango (1 cup when mashed)
- 3/4 cup Coconut milk
- 1 tablespoon Vanilla
- 1/4 cup Coconut oil
- 1 cup All-purpose flour
- 1/2 cup Sugar
- 1 cup Whole wheat flour
- 2 teaspoon Cinnamon
- 1 teaspoon Mixed Spice
- 1 tablespoon Baking soda
- 1/2 teaspoon Salt
DIRECTION:
- Preheat oven to 200 degrees Celsius.
- Blend mango, ripe bananas and coconut milk
- Pour mango mixture in a bowl . Add oil and vanilla and mix
- In a separate bowl, sift all-purpose flour, baking soda, spices and salt. Add sugar and whole wheat flour and combine well
- Gradually add dry ingredients to wet mixture and cut and fold to combine well
- Grease a bread tine with oil and dust with cinnamon (or flour if you so desire)
- Pour bread mixture into tin and level off with the back of a spoon
- Bake for 40 minutes (can be 50 minutes depending on the oven)
- Remove from tin and set to cool
Slice and enjoy Mango Banana Bread with milk or coffee.
