Mango Banana Bread

MANGO BANANA BREAD

This moist Mango Banana Bread is a delicious and fragrant variation of traditional banana bread. The preparation is fairly easy and uses everyday ingredients. And its a lovely recipe to use if you have excess mangoes (although there is no such thing) and overripe bananas at the same time. Enjoy!

  • INGREDIENTS:
  • 4 small ripe bananas (3/4 cup when mashed)
  • 1 Mango (1 cup when mashed)
  • 3/4 cup Coconut milk
  • 1 tablespoon Vanilla
  • 1/4 cup Coconut oil
  • 1 cup All-purpose flour
  • 1/2 cup Sugar
  • 1 cup Whole wheat flour
  • 2 teaspoon Cinnamon
  • 1 teaspoon Mixed Spice
  • 1 tablespoon Baking soda
  • 1/2 teaspoon Salt

DIRECTION:

  1. Preheat oven to 200 degrees Celsius.
  2. Blend mango, ripe bananas and coconut milk
  3. Pour mango mixture in a bowl . Add oil and vanilla and mix
  4. In a separate bowl, sift all-purpose flour, baking soda, spices and salt. Add sugar and whole wheat flour and combine well
  5. Gradually add dry ingredients to wet mixture and cut and fold to combine well
  6. Grease a bread tine with oil and dust with cinnamon (or flour if you so desire)
  7. Pour bread mixture into tin and level off with the back of a spoon
  8. Bake for 40 minutes (can be 50 minutes depending on the oven)
  9. Remove from tin and set to cool

Slice and enjoy Mango Banana Bread with milk or coffee.
